A CIRCULAR LOGISTICS AND LEARNING HUB

Bowline is pursuing the establishment of a circular logistics and learning hub outside of Copenhagen that would connect restaurants directly to green sources, soil and small farmers. Partners in this project include Hegnsholt Farm, Lejre Kommune, the FOOD Organization of Denmark, the Copenhagen Hospitality College, FoodSHIFT 2030, and the CBS K Initiative at Copenhagen Business School.

We envision that the hub as a short food supply circle that will innovate sustainable deliciousness.

The hub will achieve this by offering variation and freshness, pooling resources, creating efficiencies, reducing costs, promoting sustainable sourcing and recycling, and thereby also boosting local, Danish regenerative agriculture.

The hub will also function as a lab for experimentation and knowledge exchange, as a tangible link between the academy and the diverse stakeholders that sustain the local food system, and as a place where new kinds of teaching and learning can occur.

Finally the hub will work with a variety of partners and stakeholders to help secure a transparent, local, regenerative food system.

Research has established that short food supply chains work best when they are stakeholder driven rather than third-party driven.

By establishing CONNECT as a cooperative, we intend to advance the strategic aims of the project and to promote more interconnectivity and collaboration among stakeholders across the food supply chain—from field to fork, and fork to field.

We intend for CONNECT to promote multi-stakeholder collaboration at the local level to produce good dividends for everyone involved. For example, because of the downturn in the restaurant sector, internship opportunities for students at the Copenhagen Hospitality College are severely reduced. By engaging these students as interns in this project, together with CBS students and other stakeholders, we can promote the values of interconnectivity, responsibility, and local sourcing among future leaders of the industry.

The new lockdown has slowed down our process of CONNECTing, but we will be adjusting to move this initiative forward online and elsewise over the coming months.
