Since its
inception in April 2020

Bowline has continued to work with and for the greater Copenhagen and international culinary community to provide a platform for conversation, insight, and information in the face of the unyielding uncertainty of the COVID-19 crisis.

Bowline brings chefs, restaurateurs, and other industry stakeholders together with academia to strengthen ties, share knowledge, and help the restaurant industry respond to present as well as future challenges.

In the early days of the crisis, we talked a lot about the fact that there isn’t really a good word in English for what we want to preserve and help to thrive in and around Copenhagen restaurants—that ineffable quality that makes sharing food and drink such an elemental human and social experience.

The Spanish verb englobar comes really close.

In this spirit we have recently launch a short questionnaire (survey) to get connected and address the immediate concerns among proprietors and staff a like.

This survey coincides with the publication of video testimonials and a general invitation to connect, lend an ear and share ideas.

Bowline has partnered with CBS Kontinuum to support the industry by bringing Copenhagen Business School faculty and students out into the community to engage in novel ways, and by leveraging the creativity of the culinary community to generate fresh kinds of research and innovative forms of lifelong learning.

Through our working group sessions, network ties, and reaching out to establish human connections in these troubling times, the Bowline group has also entered into collaboration with a number of equally important partners and contributors including:
